
I'm a simple emigrant and local cuisine never ceases to amaze me
The other day we were in a Bavarian village, staying in a small Alpine guesthouse. All meals were included, and, it felt, they fed us to the gills. And, most notably, the heartiest meal was dinner: both soup and a main course with a steak and dessert. And on the second day something strange happened. In front of me was placed a plate that contained only broth, in which floated sliced pancake, seasoned with fresh herbs. I couldn't believe my eyes at first; I thought perhaps it was an unsuccessful egg noodle and the cook had simply messed up the proportions. But no. It was Flädlesuppe (flädlesuppe) or "pancake soup": the pancake we know is cut into thin strips and dropped into hot broth. And this soup is also considered "comfort food." I don't know, I didn't feel very comfortable when I first saw it. 😅 But I must say, it tasted quite decent. A rich beef broth, and most importantly, WITHOUT ONION. In Swabia it's loved for holidays, and in Austria it's often served at weddings. The main thing is, don't tell the grandmothers; surely they'd like the idea of using leftovers of old pancakes. By the way, for dessert that dinner they brought us Kaiserschmarrn; I'll post in the comments what it looks like, but you could say it's "pancake scraps."
