It would seem that nothing could be simpler than just going and buying potatoes — it's really that easy. I did just that; I saw in the store that bags came in different colors, but I thought it didn't matter. I came home, boiled the potatoes, and they were of a strange color. Turns out there are three types of this very potato, and they differ in their starch content. That is, depending on its starch content, the potato will either break down a lot, which is good for mashed potatoes, or a medium amount, or not at all — not breaking down, which is good for various salads, so that the diced cubes stay cubes. And that color labeling tells the buyer what is what. The green — low starch content. Red — medium, and blue — high. The blue one is best suited for cutlets with mashed potatoes.
